When working in person, it's important that a therapy/healing session takes place where your animal feels comfortably fed, relaxed and safe. With horses, a stable is ideal, but otherwise a quiet corner of a field or yard without a lot of distractions would be fine.
More usually, when working distantly, it's useful to plan a session for when your animal is likely to be relaxed and not too over-exerted. Normal daily exercise is fine.
After the session, you may notice your animal feeling more relaxed and settled than usual, or maybe changes will feel more subtle. Some animals will sleep or drink more, and some will seem perkier and more sociable. It depends on the individual and also the depth and type of issues involved.
Sometimes after a session behavioural or physical problems can get worse before getting better (a 'healing crisis'), as energy has shifted and is being released. Working distantly, I have found this happens only occasionally, but in the event that it does, just make sure your animal has plenty to drink and can rest as much as possible (again, normal daily walks/riding/turnout is absolutely fine.
